Sour Cherry Marble Cake

Sour cherries are most enjoyed in cakes and drinks, as they give so much flavor to different cakes, pastries or beverages than eaten raw.

Today I made a simple and easy sour cherry cake and added in some cocoa for an image that catches the eyes and pampers your taste buds.

Loaf cakes are my favorites because they’re so easy to make and so versatile in the same time.

You can use cherries, peaches, apricots, plums, strawberries and even pineapple for this cake. Just to variate.

Let’s see what we need for this sour cherry cake.

Ingredients Needed

  • Fresh or frozen sour cherries (pitted)
  • Butter, sugar, eggs
  • Flour (all purpose), milk, baking powder
  • Vanilla extract, lemon zest, cocoa powder

Nothing fancy. So let’s get cooking.

How To Make This Sour Cherry Cake

1. Make the batter

Get a large bawl and blend the soft butter with sugar. Add the eggs. Mix well to incorporate with a hand whisk (no need for electric mixer here).

Add half of the flour, mix then half of the milk. Add baking powder, vanilla extract and lemon zest.

Mix again to incorporate well. Add the remaining flour, mix. Then the remaining milk and incorporate everything very well.

2. Bake

Line and grease two loaf pans with butter and pour in the white batter reserving 3-4 tablespoons aside. Here you’ll add the cocoa powder and some milk (or water) and incorporate well.

Add a layer of sour cherries on the white batter, pour over them the cocoa batter and make swirls with a spoon or a fork to obtain the marble effect.

Add some more sour cherries on top and bake the cake at 180° C / 350° F for about 45 minutes or until a toothpick comes out clean.

Let them cool a little then get the loaves out of the baking pans and transfer on a wire rack until fully cooled. Decorate with icing sugar if you wish.

Serving & Preserving

Slice as you need and wrap the rest in cling film. Keep it on the counter up to 3 days, if it lasts that long…

Ingredients

  • 2 cups (500g) fresh or frozen sour cherries
  • 7/8 cup (200g) butter at room temperature
  • 1/2 cup (200g) sugar
  • 4 eggs
  • 1 cup (250ml) milk + 3 tbsp
  • 3 1/3 cups (400g) flour
  • 2 tbsp cocoa powder
  • 1 tsp baking powder
  • 2 tbsp vanilla extract
  • lemon zest from 1 lemon

Instructions

  • Mix the butter with sugar until blends well. Add the eggs. Mix to incorporate. Add half the flour and incorporate. Add half the milk and incorporate. Add vanilla extract and baking powder. Stir in the rest of the flour and milk. Incorporate well everything.
  • Line and grease with butter 2 baking pans. Pour in the batter reserving 3-4 tablespoons. Add in the cocoa and 3 tbsp milk to obtain the cocoa batter.
    Place some sour cherries on the white batter, pour over the cocoa batter and make swirls with a spoon or a fork. Add more sour cherries on top and bake at 350° F for 45 minutes or until done.
    Let the loaf cakes cool on a rack wire until completely cooled. Decorate with icing sugar if you like, slice and enjoy!
